Preheat oven to 190°C (375°F, gas mark 5)
Cook the turkey strips in the flour seasoned with pepper.
Heat oil in saucepan and cook the turkey for 2-3 minutes, stirring continuously, until sealed.
Stir in onions, garlic and apricots, then add milk.
Cook for a further 2-3 minutes until thickened and smooth, then stir in cheese. Transfer mixture to ovenproof dish.
Mix together breadcrumbs, most or parsley and cheese and sprinkle over top.
Bake in oven for 15 minutes. Garnish with remaining parsley.
